Sweet Red Bean Soup


Supplies you will need:

1 cup adzuki bean, available at all Asian grocery stores
1
thin slices ginger
1 teaspoon cinnamon
0.5 teaspoon lemon zest
2 litre water

Place all ingredients in a rice cooker or slow cooker.  Cook until beans are soft and mealy.  Depend on the freshness of your beans and/or your cooking method this may take 1 hours (rice cooker, fresh beans) or more.

Add about 1 tablespoon of coconut milk for a richer taste.  Add about 1-2 tablespoon of bee propolis honey for sweetness.  Add water for a soupier consistency is prefered.
